Delicious Organic Dishes !

I have found some of these great organic recipes from 星洲日報/大都會‧dated 2008.03.23.

I posted it here for my future reference.


備長炭豆腐乾撈面
材料
備長炭乾撈面1片、有機豆腐(切薄片)2至3片、包菜-1/6顆、紫色包菜1/6顆、紅蘿蔔半顆、小白菜1小把、小番茄(切開)4至5粒、芝麻1茶匙、葵花仁1茶匙。

調味料
橄欖油1茶匙、香菇素燥醬1湯匙、有機大豆油膏2湯匙、有機生抽適量、有機麻油適量。

做法
1.首先,把備長炭乾撈面放入熱水中燙軟,再撈起,瀝乾水。
2.把香菇醬、有機大豆油膏、有機生抽和麻油拌勻,待用。
3.往麵條中加入攪拌均勻的醬料和橄欖油,再加入其他處理好的青菜。
4.最後,撒上適量的芝麻和葵花仁,即可。

有機三寶糙米

材料A
糙米1小杯、小米1湯匙、黑豆1茶匙、紅豆1茶匙、水適量。

材料B
包菜(切絲)1小撮、黃瓜(切絲)適量、紅蘿蔔絲少許、蘋果醋1湯匙、黃糖適量、鹽少許。

材料C
薑絲少許、金瓜1小片、黑木耳少許、鹽少許。

材料D
薑絲少許、香菇(切絲)1朵、沙葛(切絲)少許、紅蘿蔔(切絲)少許、鹽適量。

做法
1.首先,把材料A的黑豆及紅豆洗淨煮軟,瀝乾。
2.然後,加入糙米、小米和水,再煮熟。
3.把材料B全部攪拌均勻,再放入冰箱醃,即可。
4.同時,熱油鍋,爆香材料C的薑絲後,再加入剩餘的材料,燜煮至金瓜變軟,即可。
5.接下來,把材料D的薑絲爆香後,再加入所有材料和水,煮一會即可。

生機五色沙拉

材料(所有材料依自己喜好決定分量)
包菜、紫包菜、黃瓜、番茄、生菜、堅果類、白芝麻、黑芝麻、喬麥、葡萄乾、百香果沙拉醬、蛋黃1個、蘋果醋4湯匙、檸檬汁1湯匙、糖3湯匙、鹽少許、橄欖油4湯匙、百香果半粒、水適量

做法
1.首先,把百香果沙拉醬材料放入攪拌機內攪拌均勻,即可。
2.再取適量百香果沙拉醬聯同處理過的蔬菜,攪拌,即可。

魚腥草紅棗茶

材料
魚腥草50克、紅棗5粒、水2公升。

做法
1.首先,把魚腥草洗淨後晾乾。
2.然後,把所有材料放入鍋內煲煮,即可。

精力湯

材料
蓿苜芽150克、海帶芽5克、腰果5粒、蘋果1粒、番茄1個、三寶粉24克、包菜2片、生菜3片、水適量。

做法
把所有材料處理乾淨和切成塊狀,再放入攪拌機內,拌均,即可。
(備註:三寶粉為大豆卵磷脂、啤酒酵母粉與小麥胚芽粉。)

Chinese New Year Dishes !


雞蛋糕

材料:

雞蛋 3粒
細糖 100克
自發麵粉 150克
甜蘇打汽水 3湯匙

做法:

1.首先,把雞蛋與糖打到濃白,再慢慢加入篩過的自發麵粉。
2.然後,再加入甜蘇打汽水,繼續攪拌至材料成團。
3.把面團倒入模型中,再放入鍋內以大火蒸10分鐘,即可。

人參雞湯

材料:

雞 1.3公斤
水 2公升

湯料:

人參 15克
蟲草 13克
枸杞 12克
淮山 12克
5克
玉竹 35克
鹽 少許
糖 少許

做法:

1.首先,把雞處理乾淨。
2.然後,把所有湯料放入鍋
內,再以中小火煮1至1小時半。
3.接下來,也把雞放入鍋內,繼續煮至雞熟透,即可。

包菜捲

材料A:

包菜 700克

材料B:

羅漢齋 1罐
沙葛(切絲) 300

胡椒粉 1茶匙
香菇(浸發,切絲) 4朵
水 1杯半
雞精 半

汁料:

水 1杯
雞精 1塊
糖 1湯匙
鹽 1/8茶匙
蠔油 半湯匙
玉蜀黍粉 1茶匙

做法:

1.首先,把包菜洗淨,再放入煮滾的熱水中燙軟,撈起並在包菜冷卻後,再抹乾水分,備用。
2.把材料B倒入鍋中,以慢火炒到沙葛變軟及湯汁收乾。
3.往包菜葉放適量的材料,再捲成長條形。
4.最後,煮滾汁料,再淋在包菜捲上,即可。

金雞報喜

材料A:

雞(切小塊) 1隻
橙(擠汁用) 1粒
橙皮 1粒

材料B:

油 1湯匙
蒜頭(剁碎) 1茶匙

材料C:

雞精塊 1塊
蠔油 1湯匙
白酒 1湯匙
胡椒粉 1茶匙
白糖 1茶匙

做法:

1.首先,把雞處理乾淨,再以1湯匙的玉蜀黍粉攪拌均勻,備用。
2.熱鍋,以小火炒香材料B,再把雞塊倒入,以中火炒香。
3.然後,加入材料C,再以中火煮熟。
4.最後,加入橙汁和橙皮絲煮一會,即可。

讓孩子也愛素食 - Vegetarian Recipes For Kids


福慧袋

材料:包菜10片、生香菇、紅蘿蔔、芹菜、馬蹄、元白。
調味料:鹽、香菇精、胡椒粉、馬鈴薯粉。
淋醬:醬、香菇精、太白粉、清水。

作法:
1.所有材料切細末,加入調味料,腌至入味。
2.把包菜放進滾水汆湯,冷卻備用。
3.將腌好的材料包入包菜,以芹菜莖作為繩子,綁成福慧袋。
4.蒸10分鐘。
5.淋上調味料,即可上桌。


杏仁南瓜營養濃湯

材料:300-400g南瓜,1粒馬鈴薯,50g腰豆。
調味料:鹽,胡椒,山葯薏仁粉3-4大匙。

作法:
1.將南瓜、馬鈴薯切小塊。
2.將水煮滾,加入馬鈴薯、腰豆及南瓜,煮到軟。
3.把三分一的湯料放入攪拌機,加入調味料,攪拌成濃液體,然後倒入湯內即可。

營養小秘訣:五色健康吃

盡量每天都能吃到以下5種顏色的飲食。

青色:番薯葉、菜心等。
赤色:紅蘿蔔、紅豆、蘋果、蕃茄等。
黃色:黃豆、番薯、玉米、香蕉等。
白色:薏仁、白蘿蔔、白木耳等。
黑色:黑豆、黑木耳、紫菜、黑芝麻等。

Cup Cake Mania !

Baking my favourite cup cake again last weekend. This time I tried to bake pandan flavoured one. The reason why I baked this flavor of cup cake is because i missed the smell of pandan leaf so much ! It's really very aromatic and unforgetable. They are known as 'daun pandan' in Indonesian and Malay; and 斑蘭 (bān lán) in Mandarin. Fresh leaves are typically torn into strips, tied in a knot to facilitate removal, placed in the cooking liquid, then removed at the end of cooking. Dried leaves and bottled extract may be bought in some places. IT's really give a very nice aroma to the dishes !

The last time when i worked on pandan leave extract is last year December when I was trying to make some 'Tang Yuen' (chinese dumpling). Gosh ! But this time i forgot to capture some great photos of it. Will do that next time & I sweared. A recipe without photos similar to nasi lemak (coconut milk rice originated from Malay) without sambal chili (Chili Paste) !


This version of cup cake recipe is adapted from Delicisious Halloween Hooting Owl Cup Cake recipe. But I have replaced the cocoa powder with 'pandan leaf' juice that I extracted from freshly picked pandan leaf from my garden. I have sprinkle some sun flower and pumpkin seeds
on top of it, plus some raisin for each cup.

Delicious Hooting Halloween Owls Cup Cake




Delicious and simple chocolate cup cakes to make with the kids at Halloween - real crowd pleasers. Kids sure will love it much ! I have tried this cup cake before, and the result is quite fantastic ! My hubby commented that it taste like those selling in bakery shop. This really lighten my heart very very much ! This is the original recipe that I have used, for my version i have adapted abit by adding some salt to the flour & evaporated milk for softer texture. Hope you like It !


Preperation and cooking times

Ready in 30-35 mins, plus cooling and decorating

Freeze cake bases only

Ingredients

  • 280g butter , softened
  • 280g golden caster sugar
  • 200g self-raising flour , minus 1 rounded tbsp
  • 1 rounded tbsp cocoa powder
  • 6 medium eggs

FOR ICING AND DECORATION

  • 200g butter , softened
  • 280g icing sugar , sifted
  • 1 tube orange ready-to-use icing
  • 1 small bag Maltesers
  • 1 tube choco M&Ms minis (use just the brown sweets) or Cadbury's mini buttons
  • 1 tub jelly diamonds (just the orange ones)

Method

  1. Heat oven to 190C/fan 170C/gas 5. Line a 12-cup muffin tin with brown muffin cases. Beat the first 5 ingredients to a smooth batter and spoon between the cases, almost filling them to the top. You may have a little left over. Bake for 20-25 mins until risen and spongy. Cool on a rack.
  2. Beat the butter and icing sugar until smooth. Slice off the very tops of the cakes and cut each piece in half. Spread a generous layer of icing over each cake.
  3. Working on one cake at a time, squirt a pea-sized blob of orange icing onto two Maltesers and use to fix a brown M&M on each. Sit the eyes, two pieces of cake top (curved edge up) and a jelly diamond on the icing to make an owl.

Wardrobe Placing Problem...



Finally we have decided on which contractor to engaged for our house renovation. The kitchen renovation plan has been drawn out carefully and lots of thoughts has been put in. We will have a 'L' shape kitchen desktop and with some cabinets on the bottom part of the desktop. And a ceiling high cabinet will be installed to place the oven and others.

When it comes to where to place our wardrobe in the master room, it's really a headache for us. Our master room is not so big but just nice the size. It's 13 X 20 feet in dimension, but the bathroom has took up 13 X 5 feet of space in total.

Initially we plan to have a 8 feet width wardrobe but looks like we really run out of space due to the room dimension. So we have decided to buy a 6 feet width wardrobe with higher storage space. Hope it is enough for us to keep our clothing, luggage suitcase and others.

When looking for wardrobe supplier, we have 2 options :-

1) Ready Made (Not sure about the quality)
2) Build In/Custom Made Wardrobe (better sliding mechanism)

Our budget is around RM 1500 - RM 2300. Hope can find what we want during HomeDec 07 at KLCC.

New House Renovation

Finally we are going to have our very own new house - 20 x 70 doubel storey ! And privacy is back ! I am waiting for this for so long !

So many things need to plan for our new house renovation yet I am getting more and more excited on it. My boy, Justin also looking forward to move in.

Imagine I can have my own living room, decorated with my own color scheme & favourite decorative items, a small garden in front of the house for gardening, an ample kitchen for me to spend my cooking & baking time. Lots of good things that I am looking forward to.

But 1st before all of these can be realized, we have to work out the renovation plan first.

Kitchen Extension
Washroom Relocation
Tiling
Painting....

Hmm...sems not much but me and my hubby have lots of arguments on these renovation ideas. Each one of us wants different things & design. Well, either one of us has to step aside in order to make sure things can go smoothly and plan out fine.

So at the end, we have settled on which reno guy to appoint for the renovation work. We will not do any renovation on the car porch area since out of budget. The estimated time need is 4-5 weeks.

Next....
Once the main piling work & wall construction is completed, we have to go and choose which tile design that we like for kitchen table top, walls, washroom walls and kitchen floor. I am looking for those color with 'zen' & more natural tone.

Next....
We have to choose paint colors for our interior & exterior walls. Interiors includes living room walls, dining room walls, master room walls and stairs + upstair living room. I prefer those not so strong but light, close to white color scheme.


Next....
My favourite part is furnitures shooping since I got chances to shop around some of the furniture shops/malls and see those nice furniture set and choose my favourite one.

We prefer simple and nice kind of design. Not too complicated. Last weekend we managed to visit a Hong kong style furniture shop in Klang. Red Apple is the shop name, it sounds sweet to me. The furniture style all looks very simple and small and cute too ! All with very sharp curve and nice color tones. But we think that the furniture is more suiable for those staying in apartment/condo couples/family. And the price not cheap also...so we just have short browse and look at the design. The guys that met us is quite nice, one with american slang and the other one trying his best to chat with us in mandarin...haha....

I am not sure about the quality of local-made furniture compare to imported one...

We Love Sushi So Much !

Me, my son and my hubby likes to eat sushi so much ! We have bring him to Japanese restaurant since he was 1 year old. So he quite familiar with the taste of Japanese food and he likes to eat seaweed as well. I know some kids don't like the fishy smell of it. Last time we have sushi meal almost twice a month. We love Genki Sushi a lot too ! But it's quite expensive if eat in this kind of restaurant. Last Saturday we decided to make some sushi for ourselves. My hubby have bought some seaweed/wakame, sushi vinegar and soya sauce from Japan. So I just need to buy Japanese Rice, bamboo mat.

The Japanese rice is very different from our local rice in terms of shape, colour and size. The size of Japanes rice is smaller and more in a round shape, compare with the rice we eat daily. And it looks more transparent also. I have planned to make a
Futomaki /Norimaki, type of thick rolled sushi and uses different type of ingredients for filling; Nigiri Sushi, sushi with vinegar rice top with raw fish or vegetables. There are the ingredients I used :

Asparagus
Short Bean
Carrot
Cucumber
Eggs
(Nigiri)
Prawns (Nigiri)
Tuna Fish wit Mayonese (We like it so much !)

This is first time I cook with Japanese rice. So I was not sure how much water needed. (Anyone have good experience welcome to share !).

So I just cooked the rice as usual. But outcome is the rice is abit too wet and soft. I have put too much of water I think. So I realized that cooking Japanese rice no nee
d to put so much water. I let the rice cooker lead opened for a while after cooked and the rice managed to get harder and drier.

Next I waited til the rice cooled first before I added in the Sushi Vinegar. What I like about this vinegar is the smell is sweet and soft, not so strong compare to other types of vinegar. Maybe this is due to its sugar content.

When you make Nigiri sushi, remember to wet your hand with water first because the
rice can be very sticky and difficult to handle.

Here are some of mouth watering sushi that I have made. Hope you like it ! haha ...you can try to make some because it's quite easy to make, economical compare to Genki Sushi and the taste I can tell you is YUMMY ! My son and my hubby love it !
